Here we go, the first post i gonna blog is Soup of Monday that i have boiled - Lotus Root Soup with Carrots. Are you a soup lover? I am and guess my whole family loves to drink soup. For me, for every meal i wish to have a bowl of soup together then i will have more appetite :)
Let me share with you how i prepare my Lotus Root Soup with Carrots.
First of all, prepare these ingredients :-

1 sections of Lotus Root
1 carrot, peeled and cut into small chunks
5 dried red dates, cut into half
some wolfberry fruits
3 dried scallop
100g pork ribs
3 bowls of water
salt to taste
Directions :-
1. Remove skin from lotus roots and cut into slices.
2. Blanch the pork ribs with hot water for about 10minutes, this is to remove the dirty bits so you can have clear soup later on. Rinse blanched pork ribs and set aside.
3. In the slow cooker pot, add 3 bowls water, lotus root slices, carrots, red dates, dried scallops and wolfberry fruits.
4. Set the temperature to 'High' and let it boil for 2hours then set to 'Low'.
5. Add some salt to taste and serve whenever you want.

P/S : For soup base, is optional to add peanuts or dried cuttlefish. It depends on personal taste.
